Peanut Butter Cookies Time.

It's no secret that I love Pinterest. I could get lost on that website mentally decorating my house, mentally decorating your house, mentally crafting, and mentally having a kick ass wardrobe. 
However when it comes to baking Christmas cookies, I never go to Pinterest for recipes. 
I go my mothers cook book filled with handwritten recipes. 
Oh how I love that book... Each page filled with my family history...
 
One of my favorite cookies in that book is my Grandma's Peanut Butter cookies. 
They are amazing, easy to make, and you probably have all the ingredients in your house right now!! 
That's right no special trips to the store for these cookies. 
And as an added bonus they totally hit that sweet spot!!! 
So without further ado I present to you 
 Peanut Butter Cookies 
(I need better title for the recipe, any suggestions are welcome) 
makes about 18 cookies
1 cup Peanut Butter (any kind works)
3/4 cup of sugar
1/4 cup brown sugar
1 egg
1 teaspoon baking soda
1/2 teaspoon vanilla (I use the pure vanilla extract, but imitation works just as well)  
additional sugar for rolling
Christmas Music for dancing and singing
Preheat the oven to 375 degrees Fahrenheit.
Turn on your Christmas music 
Mix all the ingredients up in a bowl. 
Dance to Christmas music while mixing.

After all the ingredients are mixed up use a spoon to grab the dough. 
Roll into balls and roll the balls in sugar (I use a little bowl to roll them in sugar) 

Spray baking sheet with baking spray 
Place on baking sheet and flatten slightly with a fork Kris Kross style (points to whoever gets that reference)
Dance around  kitchen as the cookies bake for 10 minutes.
Remove and let cool before removing from baking sheet. 

Then go sit by your Christmas tree with an cup of hot chocolate 
Continue to listen to the Christmas music 
and Enjoy!!! 

PS. You can also use chocolate chips to make it extra yummy!!!

I love how few ingredients are required for PB cookies. I wonder how these would be with toffee chunks...heheh.

Oh yum! This just reminded me that my future mother in law makes these every Hanukkah! That's coming up so just as I saw yours and started craving them, I will be having them soon!
